Ingredients

Here’s a list of what you need:

  • Chocolate cake mix
  • Eggs
  • Vegetable oil
  • Vanilla extract
  • Canned vanilla frosting

How to Make Chocolate Sandwich Cookies

  1. Place cake mix, eggs, oil, and vanilla in a mixing bowl.

  2. Use a hand mixer to beat for 1 minute until combined.

  3. Pour the batter into a gallon-size zip-top plastic bag and seal shut.
  4. Cut a corner of the bag to about ½-inch opening.

  5. Pipe batter onto a parchment paper-lined baking sheet in 2 to 2½-inch circles keeping them 2 inches apart.

  6. Bake at 350 degrees for 8 minutes.
  7. Remove cookies from the oven and let them cool on the baking sheet for 2 minutes.
  8. Transfer cookies to a cooling rack and cool completely.

  9. Spread frosting onto one cookie.

  10. Gently press another cookie on top.

  11. Repeat until all cookies are filled. 
  12. Store cookies with wax paper between layers and loosely covered.
